- 2 T. Baking Powder
- 1/2 t. Salt
Butter and Sugar
- 1 Cup Butter (2 sticks)
- 2-1/2 - 3 Cup Sugar, Trader Joe's organic
Wet Ingredients
- 7 eggs, separated
- 1-1/4 Cup Milk
- 1 T. Vanillia Extract, Trader Joe's bourbon
- 6 T. Coffee, decaf instant
Steps
- Makes 2-8-inch round pans plus 12 or less cupcakes
- Materials: Electric Beater
- Preheat oven to 375.
- Put the butter and sugar into a big mixing bowl and allow to come to room temperature.
- Sift the dry ingredients together with a sifter onto 2 dinner plates. 3 X
- Separate the eggs carefully, putting the whites into a small mixing bowl. Put the yolks in a large glass. You must not get even the smallest amount of yolk or fat into the whites. For this reason, separate each egg white into a tiny bowl or teacup, then dump it into the small mixing bowl only if the separation is successful. Contaminating the yolk with white is o.k.
- Line two round pans on the bottom only with parchment paper, or oil them
- Put liners into the cupcake tins, or oil them.
- Using perfectly clean beaters, beat the egg whites until stiff peaks form. Put aside.
- Cream together the Butter and the Sugar in the big mixing bowl with the electric beater.
- Add Egg yolks, Extracts, coffee and beat.
- Alternately add the Milk and the Dry ingredients. Add more milk if needed until you get a thick but not stiff batter.
- The tricky part begins. With a big spatula or spoon, gently transfer the beaten whites to the big bowl. If unbeaten whites remain, wash the beaters thoroughly and re-beat the rest. Dump them in.
- Using finesse, with a big spatula or spoon, gently but thoroughly fold in the beaten egg completely. You don't want to destroy the foam, but you want to incorporate it fully.
- With the spatula, put mixture into the pans and cups, about 2/3 full.
- Bake them until a toothpick can be removed cleanly. Don't jostle them while baking, or they may fall.
- Remove pans from oven and let them cool to room temperature.
- Frost with butter-cream frosting. Orange flavored is good.
- 2009 variation: Strawberry - use sweetened fruit instead of milk: leave out 1/2C sugar, leave out almond extract. Make strawberry frosting.
