Vishal's chocolate birthday cake

Desserts

Ingredients

  • 2 Eggs, large
  • 1/2 Cup Water
  • 1/2 Cup Butter = 1 stick, preferrably unsalted
  • 3 Ounce Unsweetened Chocolate, "Bakers" brand
  • 1 T. Instant Coffee Powder, decaf preferred
  • 2-1/3 Cup Sugar
  • 1 t. Vanillia Extract
  • 2 Cup Cake flour, may substitued Gluten-free flour
  • 1-1/2 t. Baking Powder
  • 1 Cup Sour Cream

Steps

  1. Remove Eggs and Butter from the refrigerator and allow them to reach room temperature - not too warm, though. (If you plan to make frosting, remove another stick now, also.)
  2. Put parchment in the bottoms of three 9-inch diameter round cake pans. If you don't have parchment, smear with oil and dust with flour.
  3. Combine water, chocolate, and coffee powder in a microwaveable container. Microwave in 20-second increments, stirring, until the mass is uniform. Cool.
  4. Preheat oven to 350 degrees farenheit.
  5. Sift Flour and Baking Powder together twice.
  6. In a large bowl, beat Sugar and Butter together until well blended.
  7. Beat in Eggs and Vanillia.
  8. Beat in Chocolate mixture.
  9. With a spoon (don't use the beater), add dry ingredients and stir just until combined.
  10. Stir in the Sour Cream.
  11. Divide batter between 3 pans. Bake for 25 minutes or until cakes begin to pull away from the pan and a toothpick inserted into the center comes out clean.
  12. Cool pans on racks for 10 minutes.
  13. Cut around the sides of the pan with a table knife to loosen. Turn cakes out onto racks and cool them completely.
  14. Frost with Orange Frosting
